Basic Pancakes and Biscuits
Basic Pancake Recipe
2 cups flour
2 eggs
2 cups of milk
2 teas baking powder
2 tablespoons sugar
1 tablespoon oil, optional
1 teas salt
1 teaspoon vanilla or almond extract
Mix all ingredients don’t over beat, prepare over medium high heat. Makes 8-10 medium sized pancakes
Baking Powder Biscuits (Drop)
½ cup shortening or butter
2 cups all purpose flour
1 tablespoons sugar
3 teaspoons baking powder
1 teaspoon salt
1 cup milk
Heat oven to 450 degrees. Cut shortening into flour, sugar, baking powder and salt, this can be done with a food processor or mixer until mixture resembles fine crumbs. Stir in milk until dough leaves side of the bowl, dough will be gooey. Drop by large tablespoonfuls onto greased baking sheet. Bake 10-12 minutes until golden brown.
