Pork Chili Verde
Green Chili
1 red onion - diced
1 tablespoon crushed garlic
2-3 lbs of lean pork
Cut the meat into 1/2" x 1/2" pieces
I like to use a lean pork shoulder
or lean port chops
2 small cans mild diced green chili's
2 table spoons ground Cumin
4 table sp Montreal Steak Seasoning
salt and pepper to taste
(I like a lot of pepper)
I use my iron skillet for this meal,
but any heavy bottom pot will work just fine
Let's Cook it up !
Start with a little extra virgin olive oil in the pan,
saute the onions and garlic, add the chili's.
( Optional -If you like it hot, you can use hot chili's
or add jalapeno's or diced chipolte's)
Add the meat and brown
Once the meat is browned, time to add some liquid.
Use either water or a can of Green Chili Verde sauce.
My favorite is a Hatch Brand Chile Verde sauce.
Cover the meat with the liquid.
Set the temperate of the stove to a simmer
cover with optional Green chili sauce
(you will need to add water as it cooks,
so keep an eye on it stirring to prevent it from burning.
)
Simmer for 45 min to an hr. until tender
Add corn meal to thicken.
Go slow here. doesn't take much
and you can always add more
but you can't take it out
you might want to mix the cornmeal
with some of the broth
This will prevent lumps of corn meal
I like to serve this with Flour tortilla's
and a Spanish Rice
